Life can be challenging at times.  Guess it’s why I run.……And as with anything in life, running has its good days and bad days.

One day I practically fly through an easy 10 miles, and the next day I can barely make my legs carry me past the 3-mile mark.  Seriously, there are good days and bad days, and today was just one of those days.

During those times, running becomes more a mental thing than a physical one.
And over years, I’ve learned that the best thing I can do is to distract myself — instead of focusing on “why is this run so hard!”

Do you ever have those days?  They are just not any fun!  One of my strategies to help me push through the end of a bad run, is anticipating the (yummy)  food waiting for me when I get back.   Like these eggs or maybe this combination.  I do love almost any veggie with a runny egg, especially when it involves mushrooms or avocado toast!  All I thought about today was my favorite post workout meal.  And a steaming hot cup of Coffee.

Sure there are other things I think about, like going grocery shopping, planning my meals, possibly a new recipe I saw and want to try.  Okay….I do think a lot about food?.

DUH….I love to run, I love good food, and I post pics all the time on FB and Instagram, and I now blog about food, running, and life.

I get lots of requests “Karen, can you come cook for me?’  “Karen, when are you opening your restaurant?” —  Or comments — “Karen, that looks so good, recipe please!” 

So today I struggled to complete my run — I started thinking about my left over roasted veggies from last night, an avocado I needed to use up, garlic, cheese, a runny egg, sourdough toast, and how good they all go together.  It worked like a charm….it helped me push through my run and instead of 3 miles I went 5.  Now normally after a run I always have a smoothie, but today I just needed more.  Maybe it was the mood I was in?

By the time I got home my mind was set……..Roasted Vegetable Hash with Spinach and a Runny Egg!

Garlic goes with everything, right? So does Goat Cheese, veggies, and avocado.  And of course my runny egg!

Seriously……Delicious!  

I mean, do I even need to explain myself?
Magic.
You know what’s even better about this recipe?  How easy it is to make and it also requires very little clean-up.  You don’t even need to put in on a plate like I did.  I have been guilty to eat this combination right out of the skillet!
You know what else.  This is the perfect post workout meal.  Lots of good protein, healthy carbs and a good fat from the avocado.  Just the right combination to refuel my muscles.
Trust me, you need this.  Now.  Or at least after your next run.

INGREDIENTS AND DIRECTIONS  

This is where you get to play.  Use any left over veggies you have in the fridge.  My hash consisted of roasted parsnips, brussels sprouts, sweet potato, fingerling potatoes, carrots, and beets.  I added some garlic and fresh spinach, goat cheese and an egg.  Often times I put the skillet under the broiler to caramelize the veggies, but PLEASE make sure if you like a runny egg to watch closely.
