Lately I have been craving energy balls for an afternoon snack. I was on a chocolate kick for a while….I am pretty sure I ate at least 3 or maybe it was 4 batches of these Nut Butter Energizing Bites last month.
To kick off Spring you probably remember I changed things up a little by making these Lemon Chia Coconut Protein Energizing Bites. These Lemon bites are about as far from chocolate as you can get but trust me, they’re amazing. They’re so good I decided to turn those same simple ingredients into a smoothie with one exception. I added one of my favorite ingredients, blueberries.
So if you want another taste of Spring, say hello to this Lemon Chia Coconut Breakfast Smoothie! It’s cool, it’s creamy, it’s vibrantly fresh, and it’s oddly comforting….“say what?”
Just like in my Blueberry Lemon Oatmeal smoothie, I added a serving of Protein to make it more substantial and the creaminess comes from the cashews and frozen banana. Seriously, it just may be my new fave next to my Blueberry Cheesecake Smoothie and my Blueberry Lemon Oat Smoothie. They’re all so good. I have an idea. LEMON CHIA COCONUT PROTEIN BREAKFAST SMOOTHIE WITH BLUEBERRIES
- 1/2 date pitted
- 1 tablespoon cashews
- 2 tablespoons unsweetened coconut flakes (reserving some for garnish)
- 2 tablespoons chia seeds
- half of a lemon unpeeled if organic
- 1/4 cup Shaklee Energizing Life Shaklee Vanilla
- pinch pink Himalayan sea salt
- 1/2 cup Blueberries
- 1/2 frozen banana
- 1/2 cup coconut milk plus enough water to make it right consistency for you
Place all ingredients in your high speed blender and blend until smooth. I also added a handful of power greens.
