This tastes as Delicious as it looks!

What’s your ideal Christmas morning look like?  Since my husband and I have no kids at home and we’re middle-aged adults now, our Christmas morning is probably similar to others with no children at home? Or maybe not?

My husband is soooo sweet on Christmas morning!  Ok, not just on Christmas morning but he does spoil me rotten at Christmas!  On Christmas morning, he sneaks out before I am awake and grabs our stockings right after he brews himself a hot cup of Jo.  He sneaks back in bed with our stockings and patiently waits for me to open my eyes.

Since I sleep with ear plugs and with a pillow over my head, I don’t hear him sneak in, but the smell of that fresh coffee gets me every-time.  One by one we take turns opening our gifts in our stockings.  Somehow it always works out I am last and have have a few more items in my stocking than him.  I’ll never forget Christmas morning in 2008 when I received the most beautiful gift of all….my diamond.  No wonder we both get excited for Christmas!

Once we are finished with our stockings, I head out for a short run and we meet up at the gym, and most often, since we usually go to church on Christmas Eve, we head back home to share our egg casserole with our guests.

I love Christmas Morning!  AND I love these eggs!  I espeically love this recipe because you can mix it up the night before, refrigerate it and when you’re ready to bake, pour it into a prepared casserole, bake for about one hour.  Easy Peasy.  You know what else, it can easily be halved.

Christmas Egg Casserole – Half the Recipe  

The best part about this egg dish is it is so versatile.  One year I made two of them since we were expecting both my family and Rob’s.  I made one with meat and the other one with lots of veggies, but meatless.  They were both a hit and even the meat lovers enjoyed the loaded up veggie version.  If you prefer, use a milder cheese such as Monterey Jack, or maybe Swiss.  Goat cheese is my favorite.  Since there are so many different combinations, this is one recipe you’ll never tire of.  I can’t wait to hear what you think.

Christmas Eggs

CHRISTMAS MORNING EGG CASSEROLE

INGREDIENTS:

  • 18 eggs (9 for half)
  • 1 cup milk (1/2 cup) I used 2%
  • 1 cup (1/2 cup) shredded cheese (I used Raw Sharp Cheddar)
  • 1 cup Greek Yogurt (1/2 cup) or sour cream
  • 1/4 cup sliced green onions
  • 1 1/2 teaspoon of sea salt
  • 1/4 teaspoon pepper
  • 1 to 2 cups of assorted roasted veggies of choice
  • 1 cup bacon, ham, or sausage if desired (optional)

DIRECTIONS:

  1. Beat eggs.  Add milk, cheese, greek yogurt, onions, veggies, meat if using, salt and pepper.
  2. Pour into greased 9 x 13 x 2 pan. (or smaller casserole if you are cutting recipe in half)
  3. Bake uncovered 325 for 40 to 45 minutes or until knife inserted comes out clean.  (sometimes it takes longer depending on the casserole you use)
