My Creamy Slaw with My Surprise ingredient which everyone LOVED at our 4th of July Picnic!

How was your 4th of July Holiday?  This year I decided not to run a race and I am ok with that decision since it was another warm day!  Hot and humid I might add with storms in the forecast.

Instead we enjoyed a wonderful afternoon at the farm.  It was not only relaxing listening to the wind rustle in the trees but much cooler in the country vs. in town.

Since it was HOT we sat in Aaron’s new chairs he built for his deck which we instantly moved to the shade.  The breeze kept us cool and it as a great afternoon of visiting as we were entertained by Willow.  She’s so funny and such a sweet dog.

I am hoping he has enough wood to make me a pair:-)

It’s hard to see her get old but she definitley is surrounded by such love and obviously can feel it since she continues to surprise us day by day with her resilience.

My brother purchased this pool in hopes she’d go in and cool off a bit on our HOT HUMID SUMMER DAYS.  Up until today (Independence Day) she wanted nothing to do with it, except taking a drink now and than.  We even put our feet in, splashed water on her, and Aaron would lift her in, but immediately she would (slowly however) walk out.

But this time, Aaron encouraged her to lay down by rubbing her back and butt.  It worked.  She loved it and stayed put cooling off as she took a drink from her very own pool!

How refreshing does this look!

It was a good day!

4th of July in the Country is the best when spent with family!

Aaron is such a master at smoking with his grill…..Rob never turns down an invite for his amazing ribs.   This time my brother also brined the chicken.  I am definitley going to try this next time I roast an entire chicken. Be sure to subscribe to my blog so you don’t miss out on future posts?.

We ended the day afternoon with a yummy meal of grilled chicken, ribs, baked beans and my delicious good for you slaw.  I can’t wait for you to try it!

Have you guessed what my secret ingredient is yet?

Most everyone probably has their own version of making slaw right?  “Do you like it creamy or do you prefer oil & vinegar dressing?”  “Can you guess what we like best? Yes, that’s right..Oil and Vinegar.” “But what makes my slaw so creamy?”

Can I have a drum role?  Left-over Guacamole on Steroids!  Next time you have left over guac, please try making my creamy slaw dressing! I know…who has left over guac?  I was sure glad I did however.  THIS IS EPIC!   I mean truly the best CREAMY SLAW EVER! Can I get a YUM?.  Thank You!

CREAMY SLAW WITH VINEGAR & OIL DRESSING PLUS….GUACAMOLE ON STEROIDS 

INGREDIENTS FOR SLAW:

  • 1 small head organic green or red cabbage (about 4 cups)
  • 1 cup of grated organic carrots
  • 1 small organic red onion, grated
  • 1/4 cup of crispy walnuts

DIRECTIONS:

  1. Use your food processor to grate all ingredients except walnuts.
  2. Place in a large bowl for mixing.

INGREDIENTS FOR VINEGRETTE:  

  • 1/2 cup avocado oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon of dijon mustard
  • pink Himalayan Sea Salt
  • Freshly ground black pepper
  • 1/3 cup left over Guacamole on Steroids or 1/2 of a ripe avocado

DRIECTIONS:

  1. Using a powerful blender, add all ingredients and blend until smooth.
  2. Taste for seasonings.
  3. Add to slaw and mix. Gently fold in walnuts.
  4. Refrigerate till ready to serve

(I doubled the ingredients for the vinegrette since I used 1 large head of cabbage…8 cups.)
