Plain and Simple Protein Bites

Apricots and Almond Butter.  Why didn’t I ever think of this before?  Most often I use dates when I whip up these tasty energizing protein bites, but as I was going through my super food cupboard, I found a surplus of these delicious apricots.  Both dates and apricots are natural sweeteners and they both pair well with almond butter so I decided to play around with my favorite protein bite recipe.

New Years Fun in Gurnee Illinois with my nieces!

What was your New Years like?  I am pleased to say mine was everything I had hoped for.  I did lots of my favorite things like run, workout, enjoy good food, and most importantly, spend time with family.  My hubby, mom and I packed up my car, headed out on the highway about noon on Friday December 3oth, and almost 7 1/2 hours later we arrived in Gurnee, Illinois.  We were tired, hungry but definitely excited!

Like most runners or exercise enthusiasts, it’s a tradition to start your Turkey day with some kind of activity.  Maybe a local race or in my case, Turkey Day Butts and Guts.  Just like every other year, my friend Sarah, kicks our butt, literally!  Everyone who attends brings a donation for food shelf and hopefully lots of energy to burn!  It’s a great way to start the day!

Pumpkin Spice Protein Smoothie


Yeah for pumpkin season right?  I am seriously loving all the different recipes showing up on Pinterest, blogs, in magazines, and Facebook.  YUM!  Have you made these Pumpkin Spice Protein Bites yet?  I am so addicted.  They’re almost as good as my original Nut Butter Bites.  In fact if you add chocolate chips to this recipe, I think they’d be as good.   You could call them Chocolate Pumpkin Spice Protein Bites!  Yikes, lets move on to my EPIC Pumpkin Spice Smoothie ok!
