Simple Paleo Sandwich Bread~Gluten Free

Occasionally days just call for bread! I love making homemade bread but since it’s just my husband and I, most often I only whip up a loaf of this sourdough bread when we’re entertaining.  To be honest, we rarely have bread at meals when it’s just us.

It’s no secret, food is one of my passions.  Real, whole + unprocessed, my friends!  I truly believe in the power of food to make you feel incredibly awesome!  As mentioned hereI don’t believe in labels, so while you will often see paleo + vegan recipes, know that I DO NOT prescribe to any one diet, because real food is magic, all on its own.

So although I adore sourdough bread on occasion when dining out or entertaining friends, I have had fun playing around with cassava, almond, tapioca, and other gluten free flours. One of my favorite grain free breads is Against All Grain.  I love her rolls, bagels, and baguettes, but they are a bit pricey.

So I decided to make my own grain free bread.  My first attempt didn’t go the best.  I tried Against All Grain’s Blender Bread.  Unfortunately I skipped the step of soaking the cashews since I used my crispy cashews.  These have all ready been soaked and dehydrated so I thought I was good to go…WRONG!  My Vita Mix almost died trying to blend up this delicious bread.

My next attempt went much better. I discovered this tip from Ellie from Simply Nourished.  Instead of soaking my cashews, I used a jar of cashew butter.  One thing I have noticed when baking with gluten free flours, organic nuts, nut butters, etc, it’s much more expensive.  This loaf probably costs around $11 since I am using all organic and wholesome ingredients. The price we pay for healthy food….!

Lets move on to my third and now my new favorite paleo sandwich bread (made with no nuts or nut-butter).  It’s soft, light, fluffy, toastable, and sandwichable.

Trust me, I have tried this toasted with smashed avocado. Fresh out of the oven with butter…to die for!  As a sandwich with almond butter and banana.  And of course, I had to try it with a runny egg. Plus it freezes well and is DELICIOUS straight out of freezer on days like today when I just really wanted a piece of bread!  And lets not forget, it’s a PERFECT treat after a long run.

You’re going to love how simple this bread is!  Almond flour and psyllium husk powder come together and work like magic every time!  Oh and I forgot to mention, the crust on this is AMAZING.

SIMPLE PALEO SANDWICH BREAD~GLUTEN FREE

  1. Preheat oven to 400°F. Line a standard 4.5″ by 8.5″ bread pan with parchment paper.
  2. Combine all the ingredients together in a food processor (or by hand). Blend until the batter becomes smooth.
  3. Pour that bread dough into the loaf pan and bake on 400°F for 30 minutes until golden brown on top.
