Blueberry Coconut Protein Smoothie Bowl

Once again I have a delicious smoothie to share with all my friends who enjoy their breakfast in a glass or bowl like me!  I love everything about smoothies. They’re simple and convenient in all the right ways!

This one happens to use my new favorite ingredient..frozen cauliflower.  Seriously I am not so sure why I waited soooo long to try this in my smoothies.

Cauliflower is the new banana!  Yes it is.  Veggies are soooo easy to incorporate into our daily smoothies! I have so many favorites but OH MY this one is so GOOD.  I believe it will soon become your daily smoothie!  Why?  Because this is so simple since all it takes is a few whole food ingredients that give you a nutritional bang for your buck (and are probably already in your kitchen).

Clean protein powder provides energy, chia seeds offer more protein, fiber and essential omega 3s, blueberries bring on the antioxidants, cinnamon squelches inflammation and coconut water helps us hydrate deeply.  This is DELICIOUS!  Perfect for any post run or coming off a Intermittent fast, which is just what I did!

And of course it’s versatile.  Not a  blueberry fan? Try using any other frozen berry.  OR mangos with a squeeze of lime…yum!  Swap the cinnamon for turmeric, which also has unbelievable healing properties. I’ll post that combo sometime soon, ok?  OK!

Not a banana fan? Omit them, but I highly recommend the nut butter! This bowl is my husbands!

Last but not least.  TOPPINGS GALORE…or NOT, you decide! If you’re not a banana fan, leave them off.  However, only if you dare, don’t forget the drizzle of nut butter! I believe it’s the “icing on the cake!

BLUEBERRY COCONUT SMOOTHIE BOWL 

INGREDIENTS:

  • 1/2 cup frozen cauliflower
  • 1/2 cup organic blueberries, plus more for garnish
  • 1/2 cup unsweetened coconut milk (full fat please) or almond milk
  • 1/2 cup coconut water
  • 1 tablespoon chia seeds
  • 1 teaspoon of cinnamon
  • 1 to 2 tablespoons almond butter
  • 2 scoops of your favorite Shaklee Protein (1 scoop Chocolate Energizing Life Shake & 1 scoop Build)
  • 1/2 cup ice cubes
  • Optional sweetener (date, stevia, or honey)
  • Fresh greens and/or these
  • Optional toppings: slivered almonds, chia seeds, blueberries, goji berries, coconut, grain free granola, cocoa nibs

DIRECTIONS:

  1. Into a blender, combine the cauliflower, blueberries, choice of non-dairy milk, chia seeds, almond butter, cinnamon, ice, optional sweetener, your greens, and blend until smooth.
  2. Add protein powder and blend again till smooth. (please don’t be tempted to add more liquid unless you want a smoothie in a glass verses a bowl).
  3. Spoon into a bowl and garnish with the toppings of your choice.
