Lemony Red Lentil Soup, What Have You Learned so Far From Our Current Experience?, Running Slow, Fast, & Everything in Between

If my husband was writing this post he’s immediately tell you to scroll all the way down until you get to the recipe. He loves most all my soups, but this one, he couldn’t stop raving about it. And believe it or not, it’s meatless.

Me on the other hand, would love it if you read my entire post. Why, because it warms my heart and I love hearing if anything I write resonates with you.

In fact, I was thinking as I was running the other morning about how incredibly grateful I am even though our world has kind of been turned up-side-down.

To be perfectly honest, there is really nothing more I can tell you about the CoVid-19 that you don’t all ready know. But I also have been thinking a lot about what I have learned from all of this.

I am slowly learning how to be less fearful and much more grateful. I am starting to shift any anxious thoughts into much more positive ones. If you haven’t seen this article yet, I promise it’s worth reading.

If you’ve been anxious, worried, or afraid with all the uncertainty that exists around us, it means you can choose to be courageous, bold and confident simply by imagining what that would feel like.

This means how you feel is YOUR choice.

It’s true, just by being more grateful for things we have that others don’t, will strengthen your immune systems. For example, I got to run today. Some people in other countries can’t even go outside, and if they do, they can only be 7 to 10 feet away from their home.

I am also thankful for those that are working in local grocery stores so we can still pick up healthy foods so I can continue to prepare wholesome meals to keep our immune systems strong. THANK YOU!

What are you grateful for? As you think start to these things, notice how how much better you feel.

Secondly, I am doing my best to give myself some grace when it comes to my morning runs. Occasionally I’ve been having a few restless nights sleep due to working late and therefore having trouble shutting down. On those days, I have noticed my morning runs are more of a struggle. If I have a speed session planned, and I don’t feel like running hard, I run easy instead. My speed has been all over the place and that’s ok!

But again, I feel so blessed not only to have the ability to run, but to also have the flexibility in my schedule to run. Many in the health care industry, or those that are working in research, are working 12 to 15 hour days and barely have time to sleep, much less run.

Last but not least, be empathic to those who are fearful and meet them where they are at. Everyone responds differently for different reasons, but do not judge anyone. Accept them for who they are and next, do your best to comfort them. Spreading joy to loved ones also helps your immune system and theirs.

One more…I am also grateful for my business. The article referred to above helped me to realize we all have a voice and we all have talents. There has never been a better time to use them my friends. My business is thriving right now because I am using my voice to share my passion about the products I use and how they can help build stronger immune systems.

And please, try thinking about all the people in the front lines working their asses off to contain this pandemic. They deserve our positivity and we need to follow the rules by accepting the fact WE GET to spend quality time with our loved ones. WE GET to play more board games. WE GET to cook and bake more. We get to…Be GRATEFUL!

Don’t forget the greens!

These uncertain times has really taught me how beneficial it is for all of us to SLOW DOWN, and I am not referring to just a morning run. Yes I too am looking forward to life getting back to normal. I can’t wait to see all my friends and family, and when that does happen, I hope I can be more intentional about my schedule. It’s OK to say NO.

Last but not least….fresh lemon juice

I do know one thing, I am super excited to host a dinner party. I miss cooking for friends and family. Until then, I plan on making this soup over and over again! It’s that good! Are you ready to make some soup?

LEMONY RED LENTIL SOUP

INGREDIENTS:

  • 3 Tablespoons olive oil
  • 2 cups diced onions
  • 1 1/2 cups finely diced carrots
  • 1 cup diced celery
  • 1 cup finely diced potato
  • 1 teaspoon salt
  • 2 bay leaves
  • 1 cup Organic Split Red Lentils
  • 5 cups chicken bone broth or veggie stock
  • 1/2 cup freshly squeezed lemon juice
  • 4 cups packed chopped fresh greens (kale, chard, spinach, or whatever you prefer)

DIRECTIONS:

  1. In a soup pot, sauté the onions, carrots, celery, potatoes, salt and bay leaves in the oil just until the potatoes begin to soften, about 15 minutes. 
  2. Rinse the lentils well. Add the lentils to the soup pot and continue to sauté for 5 minutes. Add the water or stock and reduce the heat to medium. Cover and simmer until the lentils and all the vegetables are tender, about 15 minutes.
  3. Just before serving, remove from the heat and stir in the lemon juice and optional greens. Stir until the greens have wilted. Season with salt and pepper to taste (as desired) and serve.
