Roasting Beets, Best Beet Berry & Açaí Smoothie + Health Benefits of Beets

If you dislike beets, don’t let it stop you from trying this EPIC Beet and Berry Smoothie!


Can I just say I think I have convinced all the non beet fans in the world (or at least in my tiny little internet corner) to fall in love with beets…🥰

First let’s talk about how to roast beets. This is my fool-proof method of roasting beets. I posted step by step instructions on Instagram with is also below.

You will never prep your beets any other way!

Here’s a step by step guide to roasting perfect beets! Video is below in case you need visual

  • cut off the knobby ends of your beets ~ no need to peel them
  • if your beets are large cut in half or quarters ~ just make sure all are about uniform in size
  • put in an oven proof kettle and add enough water to cover them my about half way
  • cover your kettle and roast at 425 for 25 minutes
  • turn over off and leave covered for another 25 minutes
  • drain and let cool
  • when cool enough to handle, your peelings will slide right off or peel off very easily
  • store in fridge
  • add to smoothies and salads or eat as snacks
  • immediately when you start running out of beets, run to the store to buy more beets😂
  • start from the beginning 😍

My top two favorite ways to use roasted beets are in smoothies and salads. This salad is probably my favorite one and you’ll also love this smoothie. I have had this smoothie almost every morning since I roasted this batch of beets.

I love this smoothie after my harder run days because both blueberries and beets have anti-inflammatory properties. But this also makes for a satisfying and healthy afternoon snack.

FYI ~ If you don’t have time to roast beets, you can also purchase them all ready roasted for you. I have found them both at Costco and at my local grocery store.

Best Beet Smoothie EVER

BEET BERRY ACAI SMOOTHIE

INGREDIENTS:

  • 1 small roasted beet peeled and quartered ~ directions above
  • handful of fresh spinach 
  • 1/2 cup frozen blueberries
  • 1 Açaí packet (I used @traderjoes )
  • splash vanilla
  • 1 to 2 tablespoons cashew butter
  • 1 pitted date 
  • 1 tablespoon chia or flax
  • 1/2 cup of unsweetened almond milk
  • 1 serving of French Vanilla Protein powder (I like this one) 
  • 1 serving collagen9

DIRECTIONS:

  1. Place all ingredients in high speed blender
  2. Blend on high until creamy stopping a couple times if needed to stir and start again.
  3. Add more water ice if desired to the consistency you like and blend again
  4. Pour in bowl and top as desired.
