I am super excited for you to make these Protein veggie loaded muffins. They are a fantastic way to satisfy your sweet tooth while nourishing your body with essential nutrients. If you need a good clean protein powder and/or a collagen, here is my favorite.

POWER PACKED PROTEIN VEGGIES MUFFIN

INGREDIENTS:

  • 1 1/2 cups oat flour
  • 1/2 cup French Vanilla Protein Powder
  • 2 scoops Collagen9
  • 1/2 oats
  • 1 teaspoon baking soda
  • 3/4 teaspoon fine sea salt
  • 1/2 teaspoon cinnamon
  • 3 eggs
  • 1 cup grated or finely chopped sweet potato
  • 1 cup mashed banana (I used green tipped)
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup chocolate chunks (optional)
  • 1 to 2 tablespoon chia seeds or flax meal or hemp seeds or other nuts/seeds (optional)

DIRECTIONS:

  1. Preheat oven to 350F. Line a 12-cup standard muffin tin with parchment liners.
  2. In a large bowl, combined the. flours, oats, protein, collagen, baking powder, baking soda, salt and cinnamon.
  3. In separate bowl, whisk together the eggs, sweet potatoes, bananas, almond butter, and honey. Add the wet ingredients to the dry. Mix till combined.
  4. Spoon batter into the prepared muffin cups, Fill each. one to the brim. Bake until a knife inserted into he center of a muffins comes out clean. 30 to 35 minutes
  5. ENJOY!
