Homemade Peanut Butter & Thai Spicy Peanut Sauce

I love making homemade nut butter!  Almond butter, Peanut butter, Sunflower, Walnut, Cashew…they’re all good! Peanut butter is usually at the top of the list for most, but most often I reach for almond butter.

But oh my..this sauce is addicting!  And it’s made with my very own crispy peanuts made into peanut butter. I may try this same recipe with cashew or almond butter next time.

If you’re looking for reasonably priced raw nuts, I most often buy mine from Azure Standards, but Trader Joes and Costco are also great sources. Nut butters can get costly if you go through them as fast as I do which is why I prefer to make my own by throwing them in my VitaMix dry container and blend until creamy. So fresh and delicious!

If you’ve been following me on my FB page, you probably noticed I was quite excited over the Boston Marathon events….and to be honest, still get goosebumps.  What a day!

I actually had Shalane’s Blueberry Beet Smoothie for days after to celebrate everyone’s accomplishments. I also made this sauce for dinner on Marathon Monday.  It’s perfect over beans, roasted veggies, and cauliflower rice.  Or combine this with shredded chicken and serve over slow roasted sweet potatoes.  So many possibilities.

THAI SPICY PEANUT SAUCE (adapted from Run Fast Eat Slow)

INGREDIENTES:

  • 1 tablespoon of peanut oil or coconut oil
  • 1 yellow onion, diced
  • 1/2 teaspoon fine sea salt
  • 3 cloves garlic, minced
  • 1 tablespoon of red curry paste
  • 1/2 cup peanut butter
  • 1 can full fat coconut milk
  • 1 tablespoons of fish sauce
  • 2 tablespoon of lime juice
  • 1 tablespoon of coconut sugar
  • 1 tablespoon of coconut aminos
  • 1 teaspoon of red pepper flakes or hot sauce
  • 2 to 3 tablespoons of chopped crispy nuts for garnish

DIRECTIONS:

  1. Heat the oil in a pan over medium heat, add the curry and suate until fragrant, about a minute.
  2. Add everything else and simmer to thicken it, about two or three minutes.
  3. Blend in your Vita-Mix or us your immersion blender.
