Copy Cat Peanut Butter Chocolate Chip Protein Bars, Option 2 with Pumpkin, Healthy Snacks

Every time I make these bars I get tons of requests for the recipe! I know I have said this before, but doesn’t everything taste better when it’s homemade?

If you love making your own protein bars and or energy bites, these are as easy as they come. I’m a huge fan of Shaklee’s Meal in a Bar and so is my husband which makes it almost impossible to keep these in stock. I always run out before my next order arrives so I decided to do create my own version.

These are my new fave! First of all I need to give credit to Erin from Erin Lives Whole. The addition of sea salt took these bars to the next level! I mean when you combine peanut butter and dark Chocolate it’s one thing, but when you throw on some coarse sea salt, OMG!

These bars so good?. The best part about making your own protein bars is you are in control of the ingredients. I prefer these because they are a little less sweet, and the addition of sea salt is amazing. Plus I made them with my own two hands and there is something so satisfying about that!

This recipe is not only easy, but made with ingredients you mostly have in your cupboard! Just 8 simple ingredients…..

I uses my food processor to make these but you can also use a large mixing bowl. Start by mixing the ingredients together, and then you’ll throw them in the fridge! This is a no-bake recipe that requires less than 10 minutes of prep time.

They are a perfect mid afternoon pick me up with my other favorite from Shaklee, Green Matcha Energizing Tea. I espeically love the tea hot with one of my these homemade bars before yoga or run class. It’s the perfect snack to hold me over until dinner later in the evening.

This is my pumpkin version…YUM?

If you are a pumpkin fan, these are easy to turn into a Pumpkin Spice Chocolate Chip bars. I made a batch of each to take to a party this weekend. We’ll see which kind go first. Any guesses?

PEANUT BUTTER CHOCOLATE CHIP PROTEN BARS WITH SEA SALT

INGREDIENTS:

  • 1 1/2 cups finely ground oat flour or store bought
  • 1/4 cup of your favorite vanilla protein powder, this one is amazing
  • 1/3 cup raw local honey
  • 1/2 cup organic creamy peanut butter
  • 1 teaspoon vanilla
  • 1 to 2 tablespoons coconut oil melted
  • a little water if needed if they seem dry
  • 1/2 cup Hu Chocolate Gems, chopped
  • sea salt optional

DIRECTIONS:

  1. Mix all ingredients together in a bowl or food processor until combined.
  2. Using your hands if needed, blend in chips.
  3. If they seem dry, don’t be afraid to add a little water, (about a tablespoons is all you’ll probably need).
  4. Press in pan and refrigerate for at least 30 minutes. Cut into bars and sprinkle with coarse sea salt if desired

NOTE: To make the Pumpkin version sub out the peanut butter for 1/3 macadamia nut butter or cashew butter. Add 1 heaping tablespoon Pumpkin Pie Spice and 1/4 cup pumpkin puree. Increase flour to about 1 1/2 cups due to the pumpkin puree.
