For those of you who are are looking for an occasional plant based pasta dish that is high in protein, I believe I struck GOLD! At least according to my husband. His comment while eating this was “You could bottle this sauce up and call it GOLD”!
Congratulations! You made it through January…almost. Unfortunately here in Minnesota, it’s still bitter cold today and there could possibly be a lot of winter weather left based on how cold it was this morning on my run. Just 2°F. To be honest, I am not sure if what the Groundhog predicts on February 2nd holds much truth, but I for one am hoping he doesn’t see his shadow and spring arrives early.

I just love making salads and the possibilities are endless especially with all the seasonal produce coming in my CSA boxes and available at the Farmer’s Markets. Recently I had some beautiful haricot verts in my box and on the same day, I spotted a red daikon radish at our weekly market. SCORE!

How was your 4th of July Holiday? This year I decided not to run a race and I am ok with that decision since it was another warm day! Hot and humid I might add with storms in the forecast.
Instead we enjoyed a wonderful afternoon at the farm. It was not only relaxing listening to the wind rustle in the trees but much cooler in the country vs. in town.
