Blueberry Protein Superhero Muffins, Fueling the Day Right, Perfect Treat for Guests

After sharing these delectable Blueberry Protein Spelt Muffins with my team a couple of weeks ago, something magical happened….what once were a delightful post-workout fuel quickly became my new favorite post-run treat and the go-to muffin to share with guests.

Everyone loved these including my husband!

Today, I’m sharing my secret behind my beloved Hearty Blueberry Protein Muffins – a powerhouse of goodness that has now woven its way into my post-exercise routine and gatherings with friends.

I used frozen blueberries from Michigan

When I shared a snapshot of these Muffins I made for my team a couple weeks ago on my Instagram stories, the response was overwhelming. Many of you requested the recipe after catching a glimpse, but I am guessing most of you missed it since stories disappear within 24 hours…am I right?

Why Superhero Muffins?

I store mine in the fridge since they don’t last long enough to freeze. You can pop them in a wam over for about 10 minutes when you get back from a cold run or walk. My New Favorite Protein Snack!

HEARTY BLUEBERRY PROTEIN SUPER HERO MUFFINS

(adapted from Rise and Run cookbook)

Ingredients:

  • 1 1/2 cups spelt flour or whole-wheat flour
  • 1 cup rolled oats
  • 1/2 cup almond flour or almond meal
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 3 eggs
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup whole-milk or Greek yogurt
  • 1 cup grated peeled apple
  • 1⁄3 cup honey
  • 1 serving (as per packaging) of Complete Collagen Powder
  • 1 1/2 cups frozen blueberries

Directions:

  1. Position a rack in the center of the oven. Preheat the oven to 350°F. Line a 12-cup standard muffin tin with paper liners.
  2. Combine the spelt or whole wheat flour, oats, almond flour, collagen9, cinnamon, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together eggs, melted butter, yogurt, grated apple, honey, and Complete Collagen Powder in a separate bowl. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the blueberries. The batter will be thick.
  4. Spoon the batter into the prepared muffin cups, filling them slightly above the brim. Bake until golden brown on top and a knife inserted into the center comes out clean, 30 to 35 minutes.
