Instant Pot Rosemary White Bean Soup, Fresh Herbs vs Dried, Bring on the Beans or Not?

Did you bring any herbs from this past summer or fall? I certainly didn’t adopt my mother’s green thumb! Even my rosemary died this year?.

Mom to the rescue again! She has this amazing rosemary plant (among others) that was getting a little over grown.

This is one of three Christmas Cactus! Its almost hitting the floor…..it is so GORGEOUS!

When she asked me if I needed any fresh rosemary, I said as a matter of fact I do!?

I had my white beans soaked and ready to go and the only ingredient I needed was fresh rosemary. Mom’s are the best aren’t they!

Yes I have plenty of dried rosemary, but for this soup, FRESH is a must according to Barefoot Contessa, and trust me, she’s a much more experienced cook then me! But I have to admit, if you have the option, always use fresh herbs! This soup is as simple and satisfying as any soup I have made and it also reminds me so much of Italy?.

I love white Cannellini beans and will never quite understand why they are on the list of “no foods” for some. Some say to have a cup of beans a day and your life will extend by 10 years. Bring on the beans.

But if you ask someone following a paleo or keto diet, they completely avoid them along with most other carbs. It is all a bit confusing so I personally just try my best to eat whole foods. As I said in this post, I don’t follow a paleo, keto, mediterranean, vegetarian, vegan, whole 30, or whatever other way of eating that is popular right now. I am not saying any of them are bad, I just think that eating mostly plants, meat occasionally, lots of veggies, and omitting processed food is simpler for me and more sustainable.

In fact, desert on occasion isn’t a bad thing either. And cultured bread, don’t get me started. I love sourdough and did you know it can actually be tolerated by celiac individuals espeically when it’s made at home with organic and clean ingredients, or purchased from reliable sources? So I strongly suggest paring this delicious soup with your favorite sourdough bread! And lots of butter…because why not?.

One trend (if you can call it that since there is SOOO much science to back it up), I completely endorse is Intermittent Fasting. There are all kind of methods and I think the most important thing to remember is to find what works for you.

So anyone want to make this White Bean with Fresh Rosemary soup with me?

ROSEMARY AND WHITE BEAN SOUP

INGREDIENTS:

  • 1 pound dried white cannellini beans
  • 4 cups sliced yellow onions (3 onions)
  • 1/4 cup good olive oil
  • 2 garlic cloves, minced
  • 1 large branch fresh rosemary (6 to 7 inches)
  • 2 quarts chicken stock
  • 1 bay leaf
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper

DIRECTIONS:

  1. In a medium bowl, cover the beans with water by at least 1-inch and about 1 tablespoon of apple cider vinegar. Let soak over night. Drain.
  2. In your Instant Pot, saute the onions with the olive oil until the onions are translucent, about 10 minutes. Add the garlic and cook over low heat for 1 more minute.
  3. Add the drained white beans, rosemary, chicken stock, and bay leaf. Cover and make sure your lid is sealed, Set to Manual for 25 minutes.
  4. Remove the rosemary branch and the bay leaf. Coarsely puree. Add salt and pepper, to taste. Serve hot.
