Who else is spending more time in their kitchen and hopefully getting outside on a daily basis. ME!

It’s no secret I love hanging out in my kitchen and yes, running is my jam. Trust me, I discovered the hard way running is way more fun and safer than skiing. At least in my opinion. Although long, cold, and windy runs in March are mentally more challenging for sure.

I also don’t like heights so running up a hill is way easier than skiing down one?. I also love to run solo and treasure my alone time, espeically on my long run Fridays, but damn, anyone finding it harder to practice social distancing when you are forced to? I love my husband, but thinking this is a little too much togetherness and it’s only been a couple days?.

I’m missing my weekly running classes and my yoga peeps. I miss going out for coffee after boot camp. Don’t even get me started on what I miss most about walking through Target doing some retail therapy?. Rarely do I need anything, but that’s not the point…it is time with my friends and just like running, my therapy?.

In any case, I am doing my best to stay active. I am still getting outside to run even in the rain. Just like most everyone else, I have no races on the calendar. Instead I am just running for fun. I am maintaining fitness so when I can participate in a race again, I’ll be ready. I have no idea when that will be and that’s OK.

I am also not finishing my run at the gym. Instead, of doing strength at our local gym, I plug into online classes. It’s not the same, but for now it is working just fine. Plus it is important to me that I know I am helping support local small businesses.

Yes, I am also spending more time in my kitchen. Did you know running or spending time outside doing what you love, cooking, and baking all help relief stress?

Lemon Tahini Roasted Brussels and Raw Cashews

It’s a great time to experiment with new recipes, which is exactly how I came up with this amazing Brussels combo. The other day I shared this on my Insta Feed and had several reach out asking me for the recipe.

Trust me, even if you were not one of those that never thought you needed another Brussels recipe, you’ll be glad you have this one?! Let me introduce you to the most amazing Brussels dish EVER! At least I think so!

All you need to do is make sure you have some raw cashews in your pantry, a lemon, garlic and onion powder, and runny Tahini. And of course, lots of Brussels?.

The rest of this recipe is pretty straight forward.
Are you ready?

LEMON TAHINI ROASTED BRUSSELS & RAW CASHEWS

INGREDIENTS:

  • 4 cups of Brussels
  • 1 cup of raw crispy cashews
  • 3 heaping tablespoons runny Tahini
  • About 3 tablespoons water or bone broth
  • 1/2 lemon, juiced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Pink Himalayan Sea Salt and fresh ground black pepper

DIRECTIONS:

  1. Cut Brussels in half and combine with cashews in large bowl.
  2. Whisk together remaining ingredients and toss with Brussels and Cashews.
  3. Place on sheet pan lined with parchment and Roast for 25 minutes at 400 degrees or until crispy.
  4. Enjoy how ever you wish.

* Yes I have to admit. It is a bit more challenging right now. However, I also feel soooo much better when I get outside for a run. No matter the distance or speed, I think you’ll discover you’ll feel better too.
