Summer Time = Blueberry “Nice” Cream & Post Long Run Treat

Have your tried Blueberry NICE-CREAM??? A version of this has been on repeat these days?!

Seriously though, I make something like this almost every day after my run and geez do I look forward to it immensely?! What do I have today after my run? Will it be a blueberry smoothie, blueberry smoothie bowl, or Blueberry nice cream?‍♀️!
Summertime = Nice Cream don’t you agree?

Another Warm Summer Morning for my Long Run Friday!

All you need is a few simple ingredients and a few minutes to whip this up. Some days I add flax and or chia seeds. Other days some Maca root and cinnamon. I’ve also added my favorite plant based yogurt in place of the almond milk, or a little of each. Just not too much, unless of course you want to drink your nice-cream like a shake. So do we call that “Nice” Shake??

I prefer eating mine with a spoon! I also love adding kale to my smoothies, my smoothie bowls, and to this delicious blueberry nice cream. I promise you won’t even taste the kale. Yes, sometimes the color isn’t too appealing depending how many kale leaves you add. Despite the murky shade of green (gray?), this smoothie is actually the BOMB?. Never ever judge a book by it’s cover, am I right??

And the fun part. The toppings! I topped my nice cream with homemade Chocolate Sea Salt granola (I promise I”ll get my recipe up soon). It’s similar to this method with a few modifications Erin Lives Whole shared in her granola . I also love a drizzle of nut butter. Use your favorite….I have so many! Finally, top it off with more fresh blueberries, cuz why not! It’s blueberry season after all!

Blueberry Nice Cream was exactly what I needed after another warm long run Friday! I hope you make this soon……it’s refreshing, healthy, and incredibly tasty!

BLUEBERRY NICE CREAM

INGREDIENTS:

  • 1 or 2 frozen bananas
  • A large handful frozen blueberries
  • A handful of kale leaves
  • 2 scoops French Vanilla Protein Powder (or chocolate)

DIRECTIONS:

  1. Blend all ingredients on low and slowly increase too high. Start SLOW and don’t add to much milk! If you do, no worries, you’ll just end up with a delicious smoothie verses nice-cream?.
  2. Top with your favorite ingredients! I used my homemade Chocolate Sea Salt Granola, Macadamia Vanilla Nut Butter, and more fresh blueberries!
