Sheet Pan Garlicky Brussels and Butternut Squash, Thanksgiving Side, Gatherings?

Everyone in the family will love this easy-to-make, easy to clean-up Sheet Pan Garliky Brussels Sprouts & Squash side dish that is also beautiful and tasty enough for your Thanksgiving table!

Sheet Pan Dinners are all the rage and for good reason. You literally throw everything on to one pan, bake, and enjoy. To be perfectly honest with you, when I was prepping this I was’t really thinking about a Thanksgiving side, but it’s lovely enough to be one!

Yes it’s true, so many things about Thanksgiving will probably be different this year. You’re probably not traveling or expecting family members from a far. Our cozy squished together “GATHERINGS” just won’t be happening this year.

But one thing I know won’t change for me and will NOT be a disappointment for me is spending time in my happy place, my kitchen. And what I love most about this side dish, it is simple enough to be on your weekly menu rotation paired with a protein of your choice, but lucious enough to be your new favorite Thanksgiving side dish. With just a few chops, a yummy marinade, and a hot oven, this is ready in less than an hour.

  • saves you money ~ seasonal veggies are less costly

  • and you’ll get a two for one ACTUALLY good Thanksgiving side dish without feeling like you just spent the whole day doing a lot of hard work.

In 2020, when we’re gathering for Thanksgiving with like, maybe just a few people, sharing a good meal with those you love is definitely NOT cancelled. Let’s make it happen my friends. Even though most everyone’s Thanksgiving *usual things* may not look the same this year like ….

  • Traveling to see family and friends
  • Gathering with large groups
  • Sharing meals around warm, cozy, and close-together tables

we can all still have some fun in the kitchen! I am here to help you make your Thanksgiving easier with this one hour sheet pan side dish. This is my kind of Thanksgiving side that is not only perfect for your Thanksgiving table, but any day of the week. I am sure you’ll have this recipe on repeat all winter long. If you’re not a Brussels fan, this side dish is amazing too!

Sheet pan Garlicky Brussels and Butternut Squash

INGREDIENTS:

  • 1 lb butternut squash, peeled and diced
  • 1 lb Brussel sprouts, trimmed and halved
  • 1 onion diced (optional)
  • 2 tablespoon avocado oil
  • 1 teaspoon sesame oil
  • 1/3 cup coconut aminos or tamari
  • 1/4 cup raw honey, maple syrup, or coconut nectar
  • juice of lime
  • 3 cloves garlic minced
  • 1/2 teaspoon fresh ginger
  • 1 teaspoon pink Himalayan Sea Salt
  • 1/2 teaspoon freshly ground pepper\

DIRECTIONS:

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment if desired. (I sometimes like to roast my veggies without parchment because often times my veggies get crispier.)
  2. Add Brussels, squash, and optional onion to a large bowl. In small bowl whisk together all other ingredients.
  3. Pour 1/3 cup of marinade on veggies and let sit for about 30 minutes and than pour onto baking sheet, leaving extra liquid behind.
  4. If using a protein (salmon, tofu, shrimp, etc) use the remainder of your marinade for protein. Let marinate in fridge for at least 30 minutes.
  5. Roast veggies for at least 35 minutes. If using protein, add to sheet pan now or roast separately for the remainder of the 20 minutes depending on choice of protein.
  6. Enjoy!
