“Minne-snow-ta” Nice Cream, (1st Post Cleanse Treat), Winter Running Problems

Trust me, it’s never to COLD for Minne-Snow-Ta “Nice-Cream”! This creamy, delicious, dairy free, no churn frozen fruit “nice-cream” with no added sugar is perfect anytime of the year. It tastes just like ice cream but it is way healthier any which way you make it!

Frozen banana, blackberries, fresh spinach, and Protein Powder

During last week’s 7 day healthy cleanse my smoothies & bowls, (and nice cream bowls), were no where near as fancy as this one! To be perfectly honest, it’s what I look forward to the most on day 8?. I’ve been making them again ever since, even on freezing cold winter days.

Frozen banana, blueberries, kale, and protein powder

Yes, even when temps are below zero, (way below zero), I love my post run meals! Some days it’s a veggie based smoothie bowl and other days, a big bowl of frozen fruit nice-cream. They’re soooo GOOD! It’s all about the toppings you know?.

This week we are having some of the COLDEST temps we’ve had since last year. Friday morning I debated about running my long run on the tread mill but the sun was so bright and it looked so pretty out I decided to brave the wind and run outdoors. I am so glad I did!

In fact, when I was running with the wind at my back I was so warm I said to myself, “I can’t wait to turn into the wind to cool off!“. OMG…what was I thinking. It was so windy a couple gusts almost blew me sideways. Trust me, my pace slowed about a minute per mile. But in all honesty, my long run Friday was actually not so terribly bad…until I turned into the wind that is?.

Tropical Protein Nice Cream ~ Banana, mango, pineapple, kale, protein powder

In any case, I hear winter running makes us stronger and I have to keep reminding myself how lucky I am I can run! Not everyone is as blessed as I am.

I am also very fortunate for a well stocked pantry, fridge, and freezer. Which ever version of “nice-cream” you make, you can’t go wrong….just don’t forget the toppings?.
