Creamy Dragon Fruit Smoothie Bowl, Looks & Tastes Delicious, Last Sub-Zero Run ?, Podcast Guest

It’s not too often my smoothie bowls look and taste delicious, but this combo meets both criteria. This creamy dragon fruit smoothie bowl is ready in 5 minutes with just 6 ingredients!

Thick & Creamy, Delicious, and PRETTY too!

If you’ve made some of my veggie loaded smoothie bowls, you’ll know they all taste incredible, but I am the first to admit, not all of them look as gorgeous as this one! I can’t wait for you to make this smoothie! It is wholesome, creamy, nutrient packed, yummy, and most of all, beautiful!

Where has this super fruit been all my life? Or am I just late to the party? I have no idea but, I know I’ll be enjoying dragon fruit on a weekly basis! One of the things I love about this super fruit, besides that is loaded with vitamins and minerals, it honestly doesn’t taste like much. With that being said, feel free to add strawberries, raspberries, or any other berry and your favorite protein powder to give you your favorite flavor of choice.

In this smoothie I use a frozen banana and cauliflower rice to create a creamy base and the dragon fruit gives this smoothie it’s gorgeous pink hue. Isn’t it lovely?! Best part, so delicious?.

As always, my tip for creamy, thick smoothie bowls, add only as much liquid to blend, start blending VERY slowly, and scrape your blender often. Trust me, it’s not complicated and this takes less than 5 minutes.

Enjoy this as your morning post workout meal, mid morning or afternoon snack, or even a healthy dessert. I promise you will also fall in love with dragon fruit. I loved this smoothie so much I had it Saturday for the first time as a snack, and again Sunday after my run.

Speaking of running, I honestly hope I am done running in sub zero temps for a while. This past Friday it was 4 below at the start of my long run Friday and almost double digits by the time I finished. You could say it felt like a heat wave, espeically with no wind!

CREAMY DRAGON FRUIT SMOOTHIE BOWL WITH CAULIFLOWER RICE

INGREDIENTS:

  • One handful frozen dragon fruit (unsweetened ~ I like PitayaPlus brand)
  • 1 cup frozen cauliflower rice (optional)
  • 1 small or 1/2 medium frozen banana
  • 1 tablespoon nut butter ~ I used this one
  • 1 serving French Vanilla Plant Protein Powder (or flavor of choice ~ I am using Shaklee’s plant which is vegan and gluten free) 
  • 1 scoop Organic Greens Booster or fresh greens (optional)
  • 1/2 cup frozen berries of choice (optional)
  • 1/4 – 1/2 cup dairy free coconut milk (I used coconut milk)  

TOPPINGS optional:

  • Coconut flakes
  • Fresh fruit
  • nut butter
  • Granola

DIRECTIONS:

  1. To a high-speed blender, add all your ingredients. Begin at low speed and gradually increase as you go. Stop frequently to scrape down the sides if needed and add only as much milk as needed to get a creamy thick consistency.
  2. Taste and adjust flavor as needed, adding more banana for sweetness, dairy-free milk for creaminess, or berries for more intense berry flavor.
  3. Pour in your pretty bowl and enjoy as is or top as desired.
