Healthy Green Salad with Edamame & Creamy Peanut Dressing, No More Boring Salads, Spring Time Running SUCKS

Over at my house when the days get longer and the weather gets “somewhat” nicer, I am all about big salads for dinner. I have NO time for boring salads!

The Healthy Green Salad You are going to LOVE

Salads can be boring….tasteless…and more than likely leave you feeling unsatisfied. Not this salad friends! It is truly one of my favorites and I have a strong feeling it will be one of your’s too!

The best part, it’s incredibly good for you, easy to put together, versatile in terms of add ‘ins and there’s a ton of flavor. I think my favorite part is the dressing. It’s so GOOD you could sit down and eat it like a smoothie…one spoonful at a time. However, I don’t recommend you do that!

A Peanut Dressing so GOOD you can eat it by the spoonful!

But trust me on this one…..

You want to gather all these ingredients together NOW:

  • lacinato kale
  • edamame
  • cucumber
  • red onion
  • avocado
  • green onions
  • walnuts
  • macadamia nuts
  • pumpkin seeds
  • peanut butter
  • vegetable broth
  • miso paste
  • garlic
  • dijon mustard
  • onion powder

Can I make Substitutions?

Absolutely! Instead of kale you could easily use spinach or mixed greens. For the nuts, almonds, cashews, or sunflower seeds can also be used. I like to sprout my nuts first which makes them easier to digest and obviously healthier.

I have also used almond butter in place of the peanut butter but cashew butter would be great too! If you are allergic to nuts, try sunflower butter.

For the cheese I used VioLife vegan feta but a ricotta would also be lovely.

As much as I love welcoming spring and of course eating more big salads for dinner, spring running also has it’s share of difficulties. First of all the weather is ALL over the place. One day it may be 60, but two days later it may be snowing.

And lets not even talk about the WIND! I am more interested in hearing how you like this salad. Tag me if you make this and comment below please.

HEALTHY GREEN SALAD WITH PEANUT DRESSING

INGREDIENTS:

  • salad
  • 1 bunch lacinato kale sliced thinly (OR mixed greens or spinach)
  • 1 large cucumber cut into quarters
  • 1 and 1/2 cups edamame
  • 1/3 medium size red onion chopped finely ())or pickled onions if you have)
  • 2 large avocados cut into small pieces
  • 1/3 cup sliced green onion (or shallots but omit if too much onion for you)
  • 1/2 cup macadamia nuts
  • 1/2 cup walnuts
  • 1/3 cup pumpkin seeds
  • 8 ounces vegan ricotta or dairy free feta
  • dressing
  • 1/3 cup runny peanut butter (or almond butter, cashew, or sunflower)
  • 1/2 tbsp minced garlic
  • 1/2 tsp onion powder
  • 1 tbsp miso paste
  • 1 tbsp dijon mustard
  • 1/2 cup veggie broth

DIRECTIONS:

  1. Add all salad ingredients to a large salad bowl.
  2. Whisk the dressing ingredients well and then pour on top of the salad.
  3. Mix very well until everything is coated.
  4. Enjoy now or refrigerate till ready to eat. Kale leaves hold up the best if you are planning on saving for later.
