To make this vegan spinach pasta recipe even higher in protein, you can use legume-based pasta instead of traditional wheat pasta. Legume-based pasta is an excellent option for those looking to increase their protein intake while enjoying a delicious meal.

Use this one or lentil or chickpea or your favorite legume pasta

Legume-based pasta, such as chickpea pasta or Edamame, can contain as much as 20-25 grams of protein per serving, significantly higher than traditional wheat pasta. This substitution allows you to enjoy a protein-rich meal without sacrificing taste or convenience.

LEMONY SPINACH PROTEIN PASTA

Ingredients:

  • 8 ounces (225g) of legume-based pasta (such as chickpea, lentil, or edamame pasta)
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 small onion or young spring onions, finely chopped
  • Fresh thyme or dried (1/2 teaspoon or one sprig)
  • 4 cups fresh spinach leaves
  • 1/4 cup seseme seeds
  • 1/2 cup vegetable broth or pasta water
  • zest of a lemon and juice
  • 1/4 teaspoon red pepper flakes (optional, for a spicy kick)
  • Salt and pepper to taste
  • Vegan Parmesan cheese or nutritional yeast for garnish (optional) or regular for non-vegan

Directions:

  1. Cook the legume pasta: Follow the package instructions to cook the legume-based pasta until al dente. Be mindful of the cooking time, as legume pasta can have different cooking times compared to wheat pasta.
  2. Sauté the garlic and onion: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, and sauté for 2-3 minutes until fragrant and translucent.
  3. Add the thyme and spinach, to the skillet. Stir well and cook for about 2-3 minutes until the spinach wilts. Add sesame seeds. Stir again.
  4. Prepare the sauce: Pour in the vegetable broth or pasta water and red pepper flakes (if using). Add lemon zest and juice. Season with salt and pepper to taste. Stir the mixture and let it simmer for an additional 2-3 minutes, allowing the flavors to melt together.
  5. Combine the legume pasta and sauce: Add the cooked legume pasta to the skillet with the sauce. Toss everything together until the pasta is evenly coated with the spinach mixture. Cook for an additional minute or two to heat through.
  6. Serve and garnish: Transfer the pasta to serving plates or bowls. If desired, sprinkle vegan Parmesan cheese or nutritional yeast on top for added flavor and a boost of nutrients. Or freshly grated parmesan cheese if you don’t need the dish to be vegan.
  7. Enjoy: Serve the vegan spinach pasta immediately while it’s still warm. By using legume-based pasta, you’ve increased the protein content of the dish, making it a satisfying and nutritious meal option.
