I just love making salads and the possibilities are endless especially with all the seasonal produce coming in my CSA boxes and available at the Farmer’s Markets. Recently I had some beautiful haricot verts in my box and on the same day, I spotted a red daikon radish at our weekly market. SCORE!
Anyhow else getting handfuls of summer squash in their CSA box? Every week I look forward to grabbing my box, peeking inside to discover what’s new this week and I always check to make sure there’s a newsletter tucked inside. Can I just say that I think I have convinced non-beet lovers to fall in love with beets. Seriously friends, this beet and berry smoothie is the perfect way to fuel up before a grueling run, or to enjoy after, like I just did! If you dislike beets, please don’t let that stop you from trying this epic smoothie! In fact, I guarantee you’ll want this smoothie every morning until you run out of those beautiful red beets you are not so sure you want in your CSA box.
Growing up under the care of a mother who’d rather spend time playing in the dirt than spend time in a mall, I have fond memories of the early spring countdown. I love Spring….it’s the time of year when the snow finally disappears for good, giving way to mud and the smell of thawing earth, and green things — shoots and sprouts and buds — begin to make their appearance.
Where did the weekend go? Does anyone else ever feel that way? This weekend just flew by! To make matters worse….we lost an hour of sleep due to daylight’s savings time. Is that why I am so tired….geez. Or could it be that I just had a rough week in general. I missed both of my running classes this week due to my mom coming down with that awful flu that’s been going around! Trust me, it wasn’t fun for either one of us. Her being so nauseous and me being worried she was getting dehydrated. Thank God for Shaklee Performance! This stuff is amazing!
I’m totally hoarding pumpkins at the moment — I recently picked up my last Fall CSA box and inside were some yummy looking squash. Not just one, but several! All different types. But guess what I picked up a couple weeks ago at our last, local farmers market of the season? A butternut squash. Truth be told, I am still buying them!
As I was going though pictures the other night I found these and I was shocked I forgot to blog about this irresistible savory pie. It’s seriously to die for! I first learned about it from my CSA friend Laura via her newsletter that she generously writes weekly! She includes recipes and other great tips related to our seasonal veggies in our box.
