Celebrating Friends with Good For You Nachos, Post NYC Marathon Dinner, Quitting Not an Option

Do you have a favorite post race meal…specifically after running 26.2 miles? Truthfully, my post marathon reward is not sweet potato nachos, or nachos of any kind for that matter, but I do have a good friend who LOVES them!

Yummy Sweet Potato Nachos

To be perfectly honest with you, I do love nachos, but what I look forward to most after a race of any distance is a hot cup of dark roast coffee, some kind of pastry and of course, runny eggs over avocado toast?!

When there’s an extra large cup of coffee and a Vegan donut after a race, you’re all smiles!

As I mentioned in this post, most everything didn’t go as planned at my last marathon, including my post race meal. Due to all the rain, the field was a muddy disaster and as we were trying to leave, we got stuck. Thanks to parking lot volunteers and a few other spectators and runners who were walking back to their cars, we finally rocked our way free. It was a muddy mess but you should have seen us rocking our bodies back and forth in the car in hopes to give us a bit more of and edge to rock free of the mud. Comical yes, but nerve racking too!

In the mean time, I quickly changed clothes in the car since I was soaked, and by this time, very hungry. We finally got out of the muddy parking lot and we headed back to this cute coffee shop where we had avocado toast the day before.

Delicious…I was so bummed after the race when we discovered our favorite coffee shop was closed on Sundays!

They also had homemade donuts which we were all looking forward to! And their coffee….OMG. SO SO GOOD! But when we arrived we saw a BIG FAT SIGN….CLOSED ON SUNDAYS. I wish you could have seen my face…..such disappointment, again?.

Oh well…we headed back to our place, Rob made me a cup of french press, a slice of sourdough toast with lots of nut butter which hit the spot and held me over until dinner later that evening.

I may have had two glasses of wine❤️️.

So I may not have had the best day from start to finish but quitting was never an option. I finished my marathon and I enjoyed the people I met along the way and the scenery was breath-taking.

I was tired but thankfully the cramps let up long enough to finish strong…..It was HARD

Thankfully all 52,000 runners at New York last weekend had a much better day…in terms of weather at least. It was a marathon for me too…I was able to watch it live and I was constantly refreshing my screen tracking a few friends. I was so happy for them…..They all did amazing, including my Coach!

It was a great day to make a killer batch of sweet potato nachos because why not… right! I have a feeling I’ll be making these more often. Feel free to use Butternut Squash or Delicata, or tortillas, if you prefer.

These are amazing and can be made with butternut squash, delicata, or sweet potatoes.

Thanks to my last fall box from my CSA, I had sweet potatoes, squash, onions, and even a small batch of cilantro. All I needed was a jalapeño, a can of black beans and a little cheese. Or a lot of cheese, you decide?.

Top these with your favorite toppings!

In closing, some year I too hope to run in the Big Apple through all the Boroughs with 50,000 plus runners. I hope I have a good weather day, I feel good, and most of all, I connect with some of my running friends. Getting to start line will be a victory. It’s such a good feeling to be healthy enough to complete 26.2 miles. Yes, I have some running goals but being a runner for life is certainly more important then a good finish time. If all the variables line up again some day, it’s icing on the cake, or a donut in my case?.

GOOD FOR YOU NACHOS

(adapted from Loon Organics)

INGREDIENTS:

  • 2 sweet potatoes or winter squash cut into 1/8 inch rounds
  • 2 tablespoon avocado oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Pink Hymalyan Sea Salt
  • 1 ripe tomato
  • 1 jalopeno, thinly sliced
  • 1/2 cup black olives
  • 1/2 cup fresh cilantro
  • 1/4 cup scallions
  • Grated cheese

DIRECTIONS:

  1. Preheat oven to 450 degrees F. Line a large rimmed baking sheet with parchment paper,
  2. In a medium bowl, toss sweet potatoes with oil and arrange in an even layer on baking sheet. (They over lap)
  3. In a small bowl, combine spices and sprinkle over the potatoes (or squash if using).
  4. Bake 20 minutes or until tender.
  5. Remove pan from oven and top potatoes evenly with beans, tomato, jalapeño, olives, scallions, and cheese.
  6. Bake 7 minutes or until toppings are warmed through. Sprinkle with Cilantro.
