Refreshing Cauliflower Raspberry Smoothie Bowl, Fall Marathon?, Periods of Melancholy, Low Carb but Not NO Carb, Fab 4

This week has been incredibly stressful. I have had some really great moments and everything seems great. But there are other times where I slip into periods of melancholy and I let the uncertainty of the future get the best of me.

Can anyone relate? I am sure I am not alone as I struggle to plan for fall. Most likely my fall marathon will be cancelled since I am all ready seeing spring races of 2021 moving to later dates in the fall?.

So do I train for it and run it virtually? Running a 10K virtually was fun, but a marathon? But then again I did run my first ultra virtually….and actually did better than I thought I would. According to my Ultra friends, this version of an Ultra is harder than running a 50K without breaks. I may find out one day?

In any case, thankfully I enjoy my alone time on my runs in the mornings and running solo is nothing new to me. My work has been keeping me busy and since I have been working from home for over 20 years, it’s also nothing new to me, and I love it! When I am not in my office, you mostly likely find me in my kitchen creating new recipes for you. It’s also a lot of fun. So my life seems about the same since COVID hit early March, but I too am ready for some normalcy to return.

So Delicious?!

I miss visiting my favorite coffee shops, cafes, spontaneous dates, dinner with friends, definitely the racing environment, and gosh I miss my family from a far! However, I am doing my best to find beauty in every day things, like delicious smoothie bowls after my mornings runs and workouts! I seriously never get tired of them. This one so different than my recent Blueberry Nice Cream Smoothie since it has NO bananas?.

Here my base is cauliflower rice and avocado, no bananas ? .

I love using cauliflower, greens, and avocados in my smoothie bowls. If you have been following me for a while now, you’ve probably noticed I love my post workout out recovery meal! I never get bored with my smoothies! I switch up the ingredients depending on what I am in the mood for, and of course my activity level that day.

Don’t forget the Nut Butter…..For this bowl I used this one but I have so many faves!

On my long run days, I love adding a banana to my smoothies. I guess I just crave more carbs on my long run days. Other days I’ll omit the banana and use cauliflower rice and avocado chunks as my base. But guess what, all my smoothies and bowls contain the FAB 4! A good balance of fiber, healthy fats, clean protein, and greens! Most often I use only one fruit but load up on the veggies?. You seriously can not taste them and it’s a great way to sneak in more veggies! I am definitely not a low carb gal, but I do practice carb cycling which I talk about here briefly.

Have fun with the toppings….be creative.

All my smoothies are very satisfying because they have at least 20 grams of clean plant protein (my preference is this one due to it’s purity but use your favorite clean brand), a good amount of healthy fats, and loads of fiber from the greens, chia or flax and fruit. Remember, the more fiber you add to your smoothies and/or smoothie bowls will decrease your net carbs.

CAULIFLOWER RASPBERRY SMOOTHIE BOWL

Base~

  • 2 scoops clean plant based protein (strawberry today)
  • A few frozen avocado chucks
  • 1/3 cup frozen raspberries
  • 1 cup frozen cauliflower rice
  • 1/2 teaspoon maca root
  • A few large kale leaves (or other greens)
  • 1 tablespoon chia seeds (or flaxseed)
  • Just enough almond milk to blend (or liquid of choice)

Toppings~

  • hemp seeds
  • pumpkin seeds
  • coconut chips
  • cinnamon
  • nut butter

Directions:

  1. Blend all ingredients in your blender on low to start. Gradually increase speed and blend till smooth.
  2. Pour into your favorite bowl and top with your faves!
