Creamy Pumpkin Pie Smoothie Bowl with Turmeric, Dare I Say Gloves Weather?, Coconut Bowls

I love everything about this Fall inspired pumpkin pie smoothie bowl. It’s thick, creamy, and infused with warming spices and creamy coconut milk for the ultimate post run smoothie bowl!

And dare I say gloves weather? The mornings here in MN are down into the 40’s all ready. Thank goodness for Pumpkin Spice and Everything Nice!!

If you’ve been following me for a while on Instagram, you’ve probably noticed smoothie bowls are something I make on a regular basis. Sometimes I drink my smoothies with a straw, but lately I’ve found they just seem more special in a bowl…and there’s room for more toppings?.

Why is it that everything just tastes better in a bowl? I love building big bowls for supper. Soups, stews, chili’s taste way better in a bowl verses a mug right? There’s just something about a bowl that screams cozy cold-weather comfort food. Last week I enjoyed a big bowl of pumpkin pie over night oats in my pretty coconut bowl?.

You’ll also notice there is something very different about this smoothie bowl compared to most of my others. It’s not green. I guess I’m so used to making my usual green smoothie I forget there are other options but this one is worth breaking habits for, let me tell you!

Don’t worry. There is still a serving of veggies in this delicious pumpkin pie smoothie bowl thanks to cauliflower! This truly tastes like you’re sitting down to a slice of pumpkin pie, but there is no added sugar and it’s loaded with protein, veggies, healthy fats, and fiber guaranteed to keep you satisfied for HOURS! It’s also incredibly delicious and super creamy thanks to the coconut milk. I’ve also thrown in some yummy spices including the amazing turmeric to warm up our insides after a chilly morning run.

How do you make a great smoothie bowl? It’s all about the consistency…it should be thick enough to eat with a spoon. Be careful not to add too much liquid and start blending on your lowest speed. Use frozen ingredients so you’ll end up using less ice for better flavor and consistency. However, If you don’t have time to freeze your pumpkin purée, (which happens to me all the time), just toss in a cup of ice cubes. 

The best part about a smoothie bowl, and probably my favourite part is the toppings! This is where you can be creative and go wild. I always like to add something crunchy, like my pumpkin spice grain-free granola, or crispy nuts, drizzle something creamy like coconut milk or drippy almond butter or both, add a few slices of banana and a dash of cinnamon.

Creamy Pumpkin Pie Smoothie Bowl with Turmeric

Ingredients:

SMOOTHIE BOWL

  • 1/2 cup pumpkin preferably frozen
  • 1/3 frozen green tipped banana chopped
  • 1/2 medjool date pitted
  • 1 tbsp natural almond butter
  • 1/2 cup cauliflower rice
  • 1 tsp raw turmeric root
  • 1/4 tsp ginger
  • 1 tsp cinnamon
  • Pinch of cloves
  • 1/2 tsp pure vanilla extract
  • 1/2 cup coconut milk 
  • 1/2 cup water (add 1/2 cup more if you want thinner consistency not as a smoothie bowl)

GARNISH (OPTIONAL but highly recommended)

  • granola
  • pumpkin seeds
  • drizzle of coconut milk
  • cinnamon or pumpkin pie spice

Directions:

  • Place all the ingredients in a high-speed blender and blend on low for 60 to 90 seconds, or until smooth and creamy. Start slowly
  • Pour into your pretty bowls and top with your favourite granola, a drizzle of coconut milk and a dash of pumpkin spice.
